Fresh blackberry pie

The blackberries are huge this year, just perfect for fresh blackberry pie.

One graham cracker crust
8oz cream cheese
8oz. cool whip
3/4 cup sugar
1 tbsp. cornstarch
3-4 tbsp. water
About 8 cups berries

Mix cream cheese and 1/4 cup of the sugar until smooth
fold in coolwhip and pour into crust
Spread about half of the berries over cream cheese, refrigerate
Place rest of berries in saucepan with the remaining 1/2 cup sugar and 3tbsp. water
Simmer until fruit is soft
Put fruit through a sieve into another saucepan and slowly bring sieved fruit to a boil
Thicken with about 1 tbsp cornstarch in water, let mixture cool
Pour cooled sieved berries over the fruit in the crust, spread
Refrigerate pie until set.

    there are far better things to do with blackberries...like make wine.

    3lb of blackberries
    2 lb sugar
    boiling water (1 gallon)
    let cool, add wine yeast.

    rack off after a few days into demijohn then wait a few months.
