1 piecrust, pre-made or make your own
1 8oz. cream cheese - cubed
enough cut up cooked turkey to fill crust halfway.
3-5 slices crisp cooked bacon, crumbled
1/2 cup heavy cream
5 eggs
2 cans diced chiles
1 cup grated cheddar cheese
salt and pepper to taste
Brush piecrust with melted butter, then spread cubed cream cheese over crust.
Placed cut up turkey and bacon in crust.

Top with the grated cheese.
I also grate some Parmigiano Reggiano over the top, to give it a little more zing!

How to eat a leftover turkey:
1. Eat whole turkey slices, cold. Excellent with cold cranberry sauce and a light red wine, like a Pouilly Fuisse (sp?)
2. Hot (open-faced) turkey sandwiches. Can use the leftover gravy, if you can successfully re-constitute it, mine usually can't be. If not, make new gravy or use a premix.
3. Cold turkey sandwiches, or as one of the meats in a Club Sandwich, but the turkey doesn't go away very fast that way.
4. Turkey a la King. Yummmmm.
5. By the time you've gotten to this point on the list, you are ready for the final step, Turkey Soup. Boil the entire rest of the carcass, and carefully pick out the bones when the meat falls off of them. Thicken the stock with Potato Buds, and do whatever you want in the way of veggies, but you can't go wrong just by dumping a can or two of Veg-All in there...
