Recipe: Hot Chicken Salad

Triticale the Wheat/Rye Guy
is going to be hosting Carnival Of Recipes, a Potluck, over at his place. You are all invited.

I am taking Hot Chicken Salad which seems to be a crowd pleaser.


2-3 cups cooked chicken cut in chunks
1 can cream of mushroom soup
1 can cream of chicken soup
3 cups diced celery
1 small onion, minced
1 cup mayonnaise
6 hard boiled eggs, chopped
1 cup slivered almonds
3 tbsp. Lemon juice
salt & pepper to taste
3 cups crushed potato chips

Mix all ingredients except potato chips.
Put in casserole and top with potato chips.
Bake 375F for 25 minutes.

Variations:
Add 1 4oz. Can diced green chiles to chicken mixture, and top with jalapeno flavored chips.

Top with cheese flavored chips.
