RECIPE: Tomato Ham and Vodka Sauce



4 tbsp. butter
1 onion, chopped
1/4 lb. cooked ham, finely chopped (prosciutto)
1/2 c. vodka
1 c. canned crushed tomatoes
1 c. heavy cream or Half & Half
3 dashes Tabasco sauce

Melt butter in skillet over medium heat. Add onion and saute until soft, about 3 minutes. Add the ham, tomatoes, and vodka and simmer until the sauce has been reduced by about one-fourth, 10 to 15 minutes. Slowly add the cream and Tabasco. Stir until well blended and hot. Serve over hot pasta (penne is recommended).
