I was craving something made with berries and found some frozen blackberries in the freezer, left over from last summer.
To save a little on the cholesterol, I used margarine instead of butter and 2% evaporated milk.
The icecream also was a lower fat version.
* 4 tablespoons butter
* 3/4 cup flour
* 3/4 cup granulated sugar
* 1 1/2 teaspoons baking powder
* dash salt
* 1/2 cup evaporated milk
* 2 cups fresh blackberries
* 2 tablespoons brown sugar
Preheat oven to 325°. Melt butter in an 8-inch square baking dish in the preheated oven. Combine flour, sugar, baking powder, salt, and milk in a small bowl and beat until smooth. Pour batter over the melted butter, top with the blackberries, then sprinkle the brown sugar evenly over the fruit.
Bake for 45 to 55 minutes, or until browned.
We like to eat our cake warm from the oven with a large scoop of iceceam
I got to do some taste testing, but the sample was WAY to small for serious evaluation. Although it was delicious, I think a LOT more testing is in order......
Did you hear that Keewee? The
man wants extra helpings!
That looks goood! I,m giving it
a try on Sunday.
Yes gincoleaves, I did hear that, and I know there will be another helping missing from the pan, and a large scoop of icecream from the freezer, when I arrive home from work this evening.

Gotta make room for Bells Bros Strawberries!! then Youderians Raspberries, and Anderson's Blueberries, then We Pick 'em Blackberries in August!!
Oh, that looks so good. Definitely doesn't look like there is anything low fat about it!
